INGREDIENTS

1 cup canned crushed pineapple well drained

1/4 cup cream cheese softened

2 cups powdered sugar sifted

1 cup shredded coconut unsweetened

Additional shredded coconut for rolling

1 teaspoon vanilla extract

 

INSTRUCTIONS

Prepare the Pineapple: Ensure the crushed pineapple is well drained. You can do this by pressing it through a sieve or using a clean kitchen towel or paper towels to squeeze out the excess liquid. This step is crucial to prevent the mixture from becoming too wet.

Mix the Ingredients: In a large mixing bowl, combine the softened cream cheese and powdered sugar. Beat them together until smooth. Add the drained crushed pineapple, 1 cup of shredded coconut, and vanilla extract to the bowl. Stir all the ingredients until well combined.

Form the Snowballs: Once the mixture is ready, take small portions and roll them into balls. If the mixture is too sticky, you can chill it in the refrigerator for about 30 minutes to make it easier to handle.

Coat with Coconut: Roll each ball in additional shredded coconut until fully coated. This not only adds an extra layer of coconut flavor but also gives the snowballs their characteristic snowy appearance.
