Marry Me Chicken Pasta

INGREDIENTS:

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon unsalted butter

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

8 ounces penne pasta, cooked according to package instructions

Chopped fresh parsley, for garnish

 

 

INSTRUCTIONS:

Season the chicken breasts with salt and pepper on both sides.

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the butter and minced garlic. Cook for 1-2 minutes, or until fragrant.

Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

Stir in the heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.

Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top. Simmer for an additional 2-3 minutes to heat the chicken through.

Serve the chicken and sauce over cooked penne pasta, garnished with chopped fresh parsley.

Tips:

For extra flavor, you can add sun-dried tomatoes, spinach, or mushrooms to the sauce.

If you prefer a thinner sauce, you can adjust the consistency by adding more chicken broth or cream.

Don’t overcook the chicken breasts to ensure they remain juicy and tender.
